Gnocchi with Spinach, Red Pepper and Tomato Sauce

This dish provides a rich source of B vitamins that are required by the body to convert food into energy.

1 tbsp olive oil
1 small onion, finely diced
1 clove garlic, crushed
1 large red pepper, seeds removed and discarded, diced
1 x 227g can chopped tomatoes
Pinch of salt
200g spinach
400g gnocchi

1. Heat the oil in a large frying pan, then add the onion, garlic and pepper and cook gently for 5 minutes.

2. Add the tomatoes and salt then simmer for 10 to 15 minutes, stirring occasionally, until the sauce has thickened. Stir through the spinach, allowing it to wilt.

3. Meanwhile, boil the gnocchi according to packet instructions.

4. Drain the gnocchi then add it to the pan with the sauce, stirring until the gnocchi is coated in sauce.

5. Divide into two bowls and serve.
