Miso Soup with Tofu
Miso soup is low in calories and makes a nourishing snack, especially with the addition of tofu.
Preparation: 5 mins
Cooking: 10 mins
1 sheet nori (seaweed), sliced into strips
3 tbsp white miso paste
1 large spring onion, finely sliced
60g firm tofu, cut into small cubes
1 tsp low sodium light soy sauce (optional)
Method1. Boil 800ml of water in a saucepan and add the nori. Turn the heat down and simmer for 5 minutes.
2. Place the miso paste in a dish with a little hot water and whisk with a fork. Add this to the pan along with the spring onion and tofu. Simmer for 5 minutes.
3. Serve in bowls and season with a little soy sauce if you like.
