Hocus Pocus Patatas Bravas
Introduction

This is not only warming on cold nights but potatoes and parsley are a good source of vitamin C.

Preparation notes

Serves 4

Ingredients

1 tablespoon groundnut oil

675g cooked cubed potatoes

1 onion, finely chopped

1 tsp chilli powder

2-3 tablespoons tomato purée

1 tablespoon chopped parsley



Method
  1. Heat the oil in a non stick frying pan.

  2. Gently fry the potatoes, onion and chilli powder together for about 10 minutes until the vegetables are golden. Stir in the tomato purée.

  3. Serve the potatoes as a side dish, garnished with chopped parsley.
