Peach and Ginger Iced Tea
6 tea bags
1.2 ltr boiling water
2 tbsp caster sugar
12 sprigs fresh mint
300ml peach juice
1 tbsp ginger cordial (undiluted)
2 fresh peaches, sliced
- Use the boiling water and tea bags to make a strong pot of tea. Add
the sugar and half the mint leaves and allow to stand for 15-20 minutes.
Remove the tea bags and cool, then remove the mint.
- Mix the peach juice and ginger
- Put lots of ice into a large
jug or punch bowl. Pour in the cold tea and peach and ginger mixture.
- Add the sliced peaches and remaining fresh mint leaves. Stir thoroughly and serve immediately.
