Tomato, Cucumber & Onion Relish

Preparation notes

Serves 6

Ingredients

225g tomatoes, chopped into small pieces
225g cucumber, peeled and cut into small pieces
110g red onion, finely diced
2 green chillies, de-seeded and finely chopped
½ tsp salt
¼ tsp sugar
3 tbsp fresh lemon juice
2 tbsp fresh coriander leaves, chopped

Method
  1. Mix all the ingredients together and chill for an hour.
